I just love these simple custard cookies. This recipe came about when I needed to use up some custard powder as the tin wouldn’t fit in my newly re-organised cupboard, and boy, am I now happy it didn’t fit! Whether dipped in tea, topped with raspberry jam and drizzled with white chocolate or crushed and used in a dessert with fresh strawberries and vanilla cream, these are just comforting, homely goodness. Most will have all of the ingredients below in their kitchen already, but if not, it will cost you less than £1.50 to buy everything and have a big batch of these on your table in less than 15 minutes.
Preheat your oven to 180C and line two baking trays with parchment paper.
Sift the flour and custard powder into a bowl so they are well mixed.
In another bowl, add the butter, sugar and vanilla and mix it until it forms a smooth paste.
Add the flour/custard mix to the butter mix and mix it until it comes together. Don’t over-work the mix or the cookies will have a less fine texture.
Take heaped teaspoonfuls of the mix and roll into a ball, press it flat and arrange evenly on the baking tray.
Bake the cookies for 10-12 minutes, until they are crisp, transfer to a wire rack. Enjoy!
